Com Am Phu ( Hell Rice)

Com Am Phu (Hell rice) is the popular dish in Hue city, it was made by the nearly 80 year old “Am Phu” (Hell) restaurant. The gourmet Phan Ton Tinh Hai said based on the Buddhist philosophy, seven colors of this dish present for the first seven steps of Buddha

At first glance on the menu you may surprise at its name but after trying it you will find this dish is truly a unique delicious specialty of Hue cuisine. Com Am Phu has the character of Hue culinary from the ingredients to the present with the simplicity of  folk and the delicate royal style.

 On a dish you could taste the soft and aromatic rice, explore the own taste of each ingredients as julienned roasted pork belly, Hue pork sausage, grinded shrimp, Nem bo lui (a kind of ground pork mix with garlic and fibre of pig skin then roast), herbs, cucumber… In one dish guest can enjoy many Hue nutritional ingredients. The attractiveness of this dish is not only the decoration, nutrition, but also its cheap price.
 
Com Am Phu is not difficult to cook but you have to do it meticulously such as cutting pork, pork sausage, fried egg to long and thin strip with the same size or decorating the dish to give the impression.
A small bowl of sweet and sour dipping sauce will add an incredible taste.
